Banana Crunch

Serves 4 (Vegetarian)

Juice of ½ lemon
4 small bananas
300ml banana yogurt
250ml fromage frais
1 egg white
4 tbsp crunchy style cereal or muesli

Pour the lemon juice into a bowl. Thickly slice the bananas and toss them in the lemon juice until they are well coated.

Mix together the banana yogurt and fromage frais. Whisk the egg white until it forms stiff peaks and then fold it into the yogurt and fromage frais mixture.

Take four tall glasses and layer with the chopped bananas and then the yogurt mixture. Finally top with a tablespoon of the cereal/muesli and serve at once.
